Another ultra-premium, hand-picked Samidori from Shirakawa, Uji — the cultivar most people mean when they picture Kyoto matcha.

Where our Ujihikari is built on sweetness, Samidori is built on body. It has a strong, full character with an elegant, refined bitterness running underneath — the classic choice rather than the easy one.

It is the bowl to serve alongside wagashi: traditional Japanese sweets meet that refined edge and both are the better for it. Long favoured by tea masters, and the reason Samidori is what Uji is known for.

In the bowl

A strong, full body with an elegant, refined bitterness running underneath — the classic Kyoto character rather than the easy one. It pairs exceptionally well with traditional Japanese sweets, and it has long been the cultivar tea masters reach for.

Preparation

Koicha — thick

4 g · 30 ml · 70–75°C

Sift, then work the powder and water together slowly with the whisk until it turns glossy and pours like cream. Thick is where Samidori's body shows — full and structured, its refined bitterness held in balance rather than flattened away.

Usucha — thin

2 g · 70 ml · 75–80°C

Sift, add the water, and whisk briskly in a W motion until a fine, even foam forms. Serve it beside a wagashi — the sweet and the tea's refined edge are made for one another.

Keeping it

Refrigerate unopened. Once opened, keep it sealed, away from light and away from anything strongly aromatic, and drink it within a few weeks — a tea this delicate is at its best early.
