An ultra-premium, hand-picked Ujihikari from Shirakawa, Uji — a genuinely rare cultivar, grown in small numbers and seldom found outside Kyoto.

What sets it apart is the sweetness. Ujihikari carries a natural richness so pronounced it reads almost as though sugar had been added, and the colour is remarkably vibrant.

The real test of any matcha is koicha. Prepared thick, where a lesser tea turns harsh, Ujihikari stays virtually free of bitterness — which is why we'd ask you to drink it that way at least once, with nothing added.

In the bowl

A natural sweetness so pronounced it reads almost as though sugar had been added, carried on a vivid, saturated green. Prepared thick as koicha — the point at which a lesser matcha turns harsh — it stays virtually free of bitterness.

Preparation

Koicha — thick

4 g · 30 ml · 70–75°C

Sift, then work the powder and water together slowly with the whisk until it turns glossy and pours like cream. This is where Ujihikari earns its price — concentrated, sweet, and with none of the harshness a thick bowl usually exposes.

Usucha — thin

2 g · 70 ml · 75–80°C

Sift, add the water, and whisk briskly in a W motion until a fine, even foam forms. Drink it as it is. Nothing needs to be added, and milk would bury what you paid for.

Keeping it

Refrigerate unopened. Once opened, keep it sealed, away from light and away from anything strongly aromatic, and drink it within a few weeks — a tea this delicate is at its best early.
